So I love trying recipes out in the crockpot and most of them have been quite successful. It started when I was teaching preschool and in a room by myself and loved to have the kids cook. Well when you are by yourself with ten 3&4 year olds it is chaos in the kitchen, hence why I began using the crockpot. Applesauce was awesome and you didn't have to do anything except add everything today and let it cook! During the Christmas season I wanted to bake cookies, but of course 10 kids in a small kitchen with too many things they can get into is a problem so I found a recipe to make chocolate chip cookies in the crockpot. The giant cookie turned out awesome and I received ton of compliments from parents on how great it made the room smell and they were amazed that you could do it in the crockpot.
In the spring it was getting stuffy in our home and I dreaded cooking since our kitchen is small and there isn't much air flow it gets so hot turning on the gas oven. Needless to say I found a recipe for lasagna, it was awesome!
As we're entering fall I've found some great pumpkin recipes I'm eager to try. In the mean time, Alan's grandparents gave us quite a few zucchinis. I love zucchini, but I'm the only one that eats it (unless I peel and cut it into tiny pieces and sneak it into dishes mwhahaha) unless it is zucchini bread. Being the end of summer and high humidity I did not want to turn on the oven so I searched for a zucchini bread crockpot recipe and low and behold I found one thanks to A Busy Mom's Slow Cooker Adventures! It had great reviews and I was so excited to try it.
Unfortunately, it didn't turn out so well for me. :( I used a crockpot insert liner which I think may
have retained too much water making the bread soggier and took longer to
cook. I actually had it on low for 4 hours and then ended up putting
it in the oven at 300 for about 20 minutes to make sure it was cooked
through. I also used egg whites not eggs not sure if that made a
difference or not. It was still good and I have plenty of zucchini I
can play around with to try it again. To anyone interested here's the recipe - goodluck!
Crockpot Chocolate Chip Zucchini Bread
Ingredients:
3 Eggs
1 1/2 cups Sugar
1 cup All Natural Applesauce (or use 1 cup vegetable oil)
3 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
2 tsp. cinnamon
3 tsp. vanilla
1/4 tsp. salt
1 cup chocolate chips (or more!)
2 cups peeled and grated zucchini
Directions:
Spray your slow cooker insert with non-stick spray.
Mix together the eggs, sugar and applesauce.
Ingredients:

Cook on LOW for 2-3 hours, depending on the size of your slow cooker. I used a 3 Quart, so the smaller, the longer it will cook because it is "deeper." If you're using a bigger slow cooker, I would check it around 2 hours.
Flip it over onto a plate or serving platter. It should fall right out if you sprayed your insert!
Next, mix in the Zucchini and chocolate chips and pour batter into your Slow Cooker Insert.

It must have not been my night for things to go right because I tried microwave fudge too and it did not set *sigh*. I guess I need to invest in a candy thermometer. It still tasted good but did not get the fudge consistency. Here is the recipe I used from Cooks.com

3/4 c. butter
3 c. sugar 2/3 c. evaporated milk 1 (12 oz.) pkg. semi sweet chocolate chips 1 (7 oz.) jar marshmallow creme 1 c. chopped nuts 1 tsp. vanilla
Microwave
butter in 4-quart bowl on HIGH 1 minute or until melted. Add sugar and
milk; mix well. Microwave on HIGH 5 minutes or until mixture begins to
boil. Stir after 3 minutes. Mix well. Scrape bowl. Microwave 5 1/2
minutes; stir after 3 minutes.Gradually stir in chocolate until
melted. Add remaining ingredients; mix well. Pour into greased 9 x 9 or
13 x 9 inch pan. Cool at room temperature; cut into squares. Makes 3
pounds.
